Ciao a tutti! We made a quick radicchio salad today! Radicchio is a favorite lettuce in Italy and it is also known as Italian Chicory! In Italy it is usually names after the region where it originates. It is great sauteed in a bit of olive oil or used quite often in making risottos.
It’s very fresh and colorful and is great for a complete meal or just an afternoon snack 🙂 Enjoy!
lettuce (i used 2 types, rocket and butter)
corn (cooked, off cob or canned with no salt or sugar added)
fresh squeezed lemon
Wash well all ingredients, especially radicchio and lettuce, since there is sometimes dirt or insects between the leaves. Drain well. Then slice the carrots, radishes, and mix with lettuces. Add sliced tomatoes and corn. Squeeze some fresh lemon juice on top and add a bit of balsamic vinegar, olive oil and oregano. Toss and enjoy! Buon appetito!!by
