Panettone is a traditional soft cake dessert in the region of Milan, Lombardy, but can be found everywhere around Italy during the Christmas holidays. It is the big holiday treat that everyone wants! You will notice it by its large, sweet, bread like appearance. There is Panettone with raisins, without raisins, chocolate, vanilla, powdered sugar, plain, just about every flavor.
Unfortunately, what you will find in the supermarkets or even fresh bakeries, is not vegan friendly.
Otherwise, we can make it at home!!
For the dough:
250 grams of white flour
50 grams of corn or tapioca starch
50 grams of natural cane sugar
3 tablespoons of hazelnut paste
juice of one orange
grated orange peel (1 orange)
40 grams of yeast
one cup of ricemilk
1 handful of raisins, soaked in water
For the chocolate glaze:
100 grams of melted chocolate
4 tablespoons of water
2 tablespoons of natural cane sugar
Mix the flour, corn or tapioca starch, cane sugar, hazelnut paste, orange juice and orange peel together. Put the yeast into a bowl and add tepid ricemilk. Then add the raisins. Pour the mix into a oil covered brownie pan that is lightly dusted with flour. Let the dough rise in a warm place for 2.5-3 hours. Then bake in a preheated oven at 350F for 45 minutes.
Once its cooled, remove the panettone from the pan, flip it upside down. Melt the ingredients for the glaze together on low flame for a few minutes. When finished, cover the panettone with the chocolate glaze and ENJOY!!
