Chickpea Flour Banana Muffins!

I “invented” a rather delicious muffin recipe and could not help but share it with all of you! It is very easy to make and the muffins turned out quite nice.

We made a batch of about 24, half of which we put into the freezer. They last about a month in the freezer, just make sure they are wrapped up nicely in aluminum foil. Then, take them out the night before you want to eat them and let them thaw in the refrigerator.

Here is the recipe:

3 ripe bananas
Mix of half chick-pea flour / half whole wheat flour – should be around 300 grams.
olive oil
raisins
dates
flax seeds
walnuts
cinnamon, ground ginger and nutmeg to taste

Mix the bananas with the flour first. It should not be too liquid – you want it at a consistency that it will not stick a lot to your hands, but it should not be so firm like pizza dough. If it is still a bit liquid, just add some more flour.

After that is all mixed together, go ahead and add the other ingredients like raisins, dates, flax seed and walnuts. Add the spices, too.

At this point after everything is mixed and you have a pretty good consistency, add it to the muffin tin. There is no need to use the muffin wrappers. On my first batch, I used muffin wrappers and they stuck terribly. I wasted quite a large amount of muffin. So on the second batch I omitted the muffin wrappers and they came out beautifully! If you do not have a muffin tin, no worries. You can use a square bread pie tin as well.
