Zucchini

Zucchini is a classic Italian vegetable. It can be used in a variety of ways, such as:

  • grilled
  • sauteed
  • fried
  • baked
  • raw, in salads
  • in breads
  • marinated
  • stewed
  • tossed, as in pasta
  • stuffed

There are several popular ways to eat zucchini. First of all, the flowers are edible and can be lightly sauteed in a bit of olive oil.

zucchini in padellaYou can also saute’ the entire zucchini cut in half or slice them. Cooking them longer with a bit of water and the cover on will result in a softer zucchini, while sauteing for only a couple minutes will leave them crunchier and fresher tasting. It depends how much oil you use as well. Peeling them is up to the individual.

A torta salata is a pie type dish that is salty, not sweet. Zucchini is used frequently to make them. Standard recipes call for eggs, milk and/or cheese, however a vegan version can easily be made.

Zucchini is also a famous ingredient in many breads, used in ravioli or topped on pasta. A creamy sauce to put onto pasta consists of zucchini, cooked down a bit until it is soft, add a bit of coconut milk and chopped cashews, salt and fresh basil. Comes out quite nice. You can also just saute garlic with the zucchini in some olive oil and mix it into the pasta!

The classic way for most Italians is to grill the zucchini. This is done by placing on the grill until both sides are nice a toasted, then soaking in in olive oil, balsamic vinegar and salt.
